This is a ripper of a dish, light healthy and great for summer!
You will need:
1 red sliced red capsicum
1 can of broad beans,
1 cup of spring onion,
red and 1 green chilli, one cucumber
2 handfuls of mixed lettuce leaves
one cup of cashew nuts.
Balsamic vinegar and olive oil to dress
You can add chicken to this dish also if you want to add more protein
Mix all the salad ingredients together with olive oil and balsamic vinegar
drain the can of broad beans and toss through with the cashew nuts
