Oh Chorizo, how I love thee!
You will need:
1 family sized packet of gnocchi
1 jar of passata, found normally on the bottom shelf in supermarket where pasta sauces are.
parmesan flakes to garnish.
Slice the chorizo thinly and fry in a hot pan with some olive oil, once the ends start to curl (do not overcook or it will become hard to eat)
add the entire contents of the passata jar
Simmer for 15-20mins to allow the meat juices to permeate the sauce
To a pot of boiling water add the gnocchi with a teaspoon of salt
Once the all the gnocchi has risen to the top of the boiling water then drain and put straight back into the the hot pot
Add a knob of butter and store through the gnocchi so it doesn’t stick together
Add the chorizo and sauce and a large handful of roughly chopped fresh basil to the mixture and stir though
Add a sprinkling of parmesan to taste before serving.
