We are on day 2 of meals under $15.00 and this is one of my personal favourites, the kids love it to. Beef and sweet potato curry!
Serves 4- 6 people
600g of chuck or blade beef.
1 Medium sweet potato
1/2 Jar of korma curry paste
1 can of coconut cream
1 teaspoon of sugar
1 1/2 Cups frozen peas
2 Tablespoons of tomato paste
- Fry onion until clear.
- Add beef. Once the beef if browned, add curry paste and tomato paste and sugar, make sure the onions and beef are coated.
- Simmer for 10 minutes.
- Pour the coconut cream in and add the diced sweet potato.
- Simmer on low for 2-3 hours stirring occasionally.
- Boil 2-3 cups of rice and add the peas to the sauce 10 minutes before serving
