- tikka masala paste
- 500g chicken thighs
- 1 red capsicum
- 1 ripe mango
- 1 small cucumber
- 1 red onion.
Dice the chicken thighs into large pieces (for a kebab) and paint them with tikka masala paste, cover and put in the fridge.
In a bowl mix diced mango, red onion and cucumber and mix.
Once the chicken is marinated later them onto the kebab stick with the red capsicum.
On a hot bbq (or pan) cook up the kebabs.
A tip to ensure the kebab sticks do not burn is to soak them overnight in water the day before) serve with mango salad.
