- 1 large butternut pumpkin,
- 500g of bacon
- 2 eggs
- 1 cup of cheese
- 1 cup of diced shallots
- peel, dice and roast up whole pumpkin & put in an oven proof dish.
- Gently mix through 2 beaten eggs and diced bacon & shallots.
- Sprinkle cheese over the dish and cook on 180 for 20 minutes or until cheese is bubbling.
