Ingredients:

  • 1 large butternut pumpkin,
  • 500g of bacon
  • 2 eggs
  • 1 cup of cheese
  • 1 cup of diced shallots

Method:

  • peel, dice and roast up whole pumpkin & put in an oven proof dish.
  • Gently mix through 2 beaten eggs and diced bacon & shallots.
  • Sprinkle cheese over the dish and cook on 180 for 20 minutes or until cheese is bubbling.
