Hidden Vege Cake!

If you have kids you know how hard it can be to get them to eat their veges. I know at some point in motherhood I have been worried that my kids wont eat them and concerned if they were getting enough goodness without veges.

I have come up with a few recipes that hide veges from the kids, it can be quite a skill let me tell you. My 4 year old can pick a piece of grated carrot from a mile away!

This cake, and I really shouldn’t call it a cake cause its not jam packed with sugar or anything, its more like a loaf, but calling it cake definitely gets the kids eating it lol

 

You will need:

1/2 Cup of cooked pumpkin

1 Grated Zucchini

1 Grated Carrot

1 Mashed banana preferably a bit over ripe.

1/2 Cup of sultanas

2 Cups of self raising flour

1/4 cup of milk

2 Tablespoons of honey, I use organic

1 Egg

40 grams of coconut oil

Method:

  • Preheat oven to 180 degrees
  • I place all ingredients into a Thermomix and blend on high so there is no visible vegetable anywhere lol, you don’t have to though you can pop in a mixer and blend on high either way they work.
  • Line a baking tin with baking paper
  • Pour Mixture into the tin and bake for 35-45 mins until cake browns up on top.
  • Slice and enjoy!

  • Made this recently for my toddler’s breakfast and she loves it. It has been renamed “breakfast loaf”. Husband has decided he too likes it for snacks. Winner 🙂
