Salmon Pikelets - The Colourful Housewife

Makes approx. 24

You will need:
Pikelet mix:
2 cups self-raising flour
4 tbs caster sugar
2 eggs
1 1/2 cups milk

Cream sauce:
300 ml sour cream
1/2 small cucumber
2 tbs chopped fresh dill

Smoked Salmon
Fresh dill

Pikelet mix:
1/ Combine flour and sugar in a medium bowl, add beaten egg and milk. Mix on a low speed until you have a smooth batter.
2/ Preheat frying pan. Lightly grease with butter. Spoon mixture in pan, cook until bubbles pop, flip and cook other side. Put aside to cool.

Cream Sauce:
1/ Dice cucumber and chop dill. In a small bowl combine sour cream, cucumber and dill.

To serve:
Put Pikelet on a plate top with cream mix, salmon and extra dill
