Savoury Devilled Eggs - The Colourful Housewife

Makes 24 halves

12 eggs
1/3 cup mayonnaise
2 Tbsp chopped shallots
2 Tbsp finely chopped capsicum
2 Tsp curry powder

1/ Boil eggs until hard. Drain the hot water from the saucepan and run cold water over eggs.
2/ Peel the eggs and place back in cold water. Once eggs are cold slice egg in half with a sharp knife and
Scoop out the yolks and place in a bowl.
3/ Arrange egg halves on a serving tray, put to the side.
4/ With a fork mash the egg yolks. Add shallots, capsicum, mayonnaise and curry powder until creamy, add more mayonnaise and curry powder if you need to.
5/ If you have a piping bag place creamy mixture into the and pipe into the egg white halves, if not just use a spoon. Sprinkle with paprika.
