Makes: 16 large
4 sheets puff pastry
2 bunches of English Spinach
1 chopped onion
1/2 cup diced capsicum
125g diced salami (Hungarian or Danish)
1 Tbsp ground Parmesan cheese
5 Tbsp ricotta cheese
75g feta cheese
2 garlic cloves
1/ Preheat oven 200C/180C for fan forced. Line tray with baking paper.
2/ Remove pastry from freezer and thaw.
3/ Heat up frying pan, add onion, capsicum, garlic and salami and sauté lightly. Remove from heat and place in a bowl.
4/ Place spinach in pan and cook until spinach just starts to wilts.
5/ Cut each pastry sheet into 4 squares. Brush edges with a little milk. Place spinach in the middle of each square. Spoon the salami mixture onto the spinach and spoon ricotta, Parmesan and crumbled feta on top of spinach
7/ Fold the edges over to form a triangle. With a fork squeeze the edges together. Brush the top with milk and pierce a few holes with a fork. Bake for 15-20 mins until golden.
8/ Serve warm or cold
