You will need:
3/4 cup self raising flour
2 tbsp caster sugar
1 cup butter milk
4 lge strawberries
1/ Preheat oven to 180C/160C fan forced, lightly grease mini muffin tin, set aside.
2/ Combine flour, sugar, egg and milk with a wooden spoon in a medium bowl.
3/ Dice strawberries, add to mixture.
4/ Spoon small amounts of mixture into lightly greased tin, fill to just below the top.
5/ Place tray in preheated oven for 10-15 minutes until they spring back and lightly golden.
6/ Serve hot or cold with whipped cream or ice cream.
